Over the course of three decades Chef Craig King has developed 5 core High Mineral Broths, each of which will take you on a flavor journey: Curried vegetables, Southwest, Thai coconut, surf and turf, and Italiano. These broths are slow brewed in a 40 gallon steam jacketed kettle. I believe and know from experience that the intention and the space held around the brewing process has a great impact on the outcome of the product. First, we take our time. We gently heat and pay careful attention to the activity in the cauldron as it goes on its multi-hour journey towards alchemy.
